75 minutes · 8 servings
Ingredients
- 3 lb peaches, about 8, peeled and cut into ½-inch slices
- ⅓ cup granulated sugar (67 g)
- 1 tbsp fresh lemon juice
- 1 tbsp cornstarch
- fine salt
- 1 cup all-purpose flour (128 g)
- ½ cup packed light brown sugar (100 g)
- ½ cup rolled oats (45 g)
- ½ cup unsalted butter (113 g), soft but cool, cut into pieces
- vanilla ice cream, for serving, optional
Steps
- Heat the oven. Preheat to 375°F with a rack in the center.
- Prepare the peaches. In a large bowl, combine the peaches, granulated sugar, lemon juice, cornstarch, and a pinch of salt.
- Fill the dish. Transfer the fruit to an 8 x 8-inch baking dish and press down gently into an even layer.
- Make the topping. In a medium bowl, combine the flour, brown sugar, oats, and ¼ teaspoon salt.
- Work in the butter. Add the butter and work it into the dry ingredients with your fingers or a pastry blender until evenly combined and crumbly.
- Assemble. Sprinkle the topping evenly over the peaches.
- Bake. Bake until the topping is golden brown and the peach juices are bubbling, 45 to 50 minutes.
- Serve. Serve warm, with vanilla ice cream if desired.
