Buttermilk Peach Cobbler
By Pinched Kitchen
Brown-sugar peaches spooned over a buttermilk batter and baked in browned butter until golden.
90 minutes · 6 to 8 servings
Ingredients
- 2 lb fresh peaches, or 6 cups frozen peach slices, pitted and sliced
- ½ cup packed dark brown sugar
- 2 tsp fresh lemon juice (2 to 3 tsp), plus more if needed
- ½ cup unsalted butter
- 1½ cups all-purpose flour
- 1 cup granulated sugar, plus more for sprinkling
- 1 tbsp baking powder
- 1 tsp fine sea salt
- 1½ cups buttermilk
- ½ tsp flavoring (½ to 1 tsp), such as nutmeg, citrus zest, cinnamon, ginger, or vanilla, or ¼ tsp almond extract
Steps
- Heat the oven. Preheat to 350°F.
- Cook the peaches. In a 10- to 12-inch cast-iron or ovenproof skillet over medium heat, combine the peaches, brown sugar, and lemon juice. Cook, stirring constantly, until the sugar dissolves and the juices thicken slightly, 2 to 4 minutes.
- Season the peaches. Transfer the peaches and juices to a bowl. Taste and add a little more lemon juice if needed.
- Brown the butter. In the same skillet, melt the butter over medium heat. Cook, swirling occasionally, until golden brown and nutty-smelling, 2 to 4 minutes. Remove from the heat and leave the butter in the skillet.
- Make the batter. In a medium bowl, whisk together the flour, granulated sugar, baking powder, and salt. Add the buttermilk and your chosen flavoring. Stir just until combined.
- Assemble. Pour the batter over the browned butter without stirring. Spoon the peaches and their juices evenly over the batter, again without stirring. Sprinkle with a little extra sugar for a crisp top, if desired.
- Bake. Bake until golden brown on top, 50 to 60 minutes.
- Cool and serve. Let cool slightly before serving warm or at room temperature.
