Black Bean, Sweet Potato & Zucchini Patties

By Pinched Kitchen

Soft, baby-sized baked patties of black beans, mashed sweet potato and grated zucchini. They freeze well.

45 minutes · 12 servings (1 baby-sized patty each)

Ingredients

  • 1 cup cooked no-salt-added black beans, drained and rinsed
  • 1 large sweet potato, about 1 cup mashed, cooked and mashed
  • 1 medium zucchini, finely grated
  • 1 large egg
  • ¼ cup oat flour (¼ to ½ cup), as needed
  • 1 tbsp olive or avocado oil
  • small pinch cumin, garlic powder, or paprika, optional

Steps

  1. Prepare the sweet potato. Cook the sweet potato until very soft, then mash. Measure out 1 cup.
  2. Prepare the zucchini. Finely grate the zucchini and gently squeeze out some excess water. Leave some moisture to help keep the patties soft.
  3. Mash the beans. Mash the black beans with a fork, leaving some texture.
  4. Make the mixture. Combine the mashed sweet potato, black beans, zucchini, egg, ¼ cup oat flour, and oil. Add optional seasoning if desired.
  5. Rest. Let the mixture sit for 10 minutes. If it is too wet to shape, add additional oat flour 1 tablespoon at a time. The mixture should remain soft and slightly sticky.
  6. Shape. Form into 10 to 12 patties, about 2 to 3 inches wide and ½ inch thick.
  7. Bake. Place on a parchment-lined baking sheet and bake at 400°F for 20 to 25 minutes, gently flipping halfway through.
  8. Cool. Let cool before serving.

Storage: Freeze the patties individually until solid, then transfer to a freezer-safe container or bag for storage.
